The wines that we denominate as Classic wines - Sauvignonasse, Ribolla, Pinot Grigio and Chardonnay - are carefully produced, but are not among the demanding wines originating from our younger vineyards. After maturating in stainless steel barrels, the wines sur lie on yeast up to 8 months. This makes them not so classically fresh, as they lose some of the basic variety aroma and gain a complex, rich and extraordinarily elegant body. Despite their dryness, they highlight freshness and minerality which means they can be drunk on all kinds of occasions… After a glass, their aftertaste makes us think about food.
